Well, I'm glad I waited a few hours before sending my "I am totally outraged
by this violation of my data" response!

Let me just say that while there are times that I've no doubt that I'd find
this feature desirable, there are also many times that I wouldn't.  I am
(generally) a professional; I do (quite often) know what I'm doing; and if I
insert data in a particular character set, there's a (pretty good) chance
that it's because I want it to be that way.  I'm really (quite) grown up and
prepared to take responsibility for my own data.

It's not that this is a bad feature, but it needs to be optional,
configurable (or at least avoidable), and predictable.  (And the first part
of predictable would be documented!).
 
Since I often find that I'm processing data on one platform, which may come
from and/or be destined for another platform, it is actually critical that I
can rely on getting out what I put in; no computer can accurately guess what
I'm putting in, or how I'd like it to look when I get it back.
