1) Yes, one or many tables

2)  Normalizing - Either moving a number of fields (1 to 100) from one table
to another (structure and/or data)
     a) & b) - I need the structure AND the data

1) we need add one more dialog for this
        where its possible choose few tables to dump.

2) choose few fields? For what task you want this ?
    you can do this now using EXPORT to TEXT file
        
    a) menu File -> Export
    b) SQL Editor -> some SELECT query -> EXPORT result
